you actually only get exchange points by beating a level or playing mercenaries emblems dont give you any
You get the exchange points by finishing the levels, not by shooting the emblems.

to get unlimited ammo for any gun you have to beat the game on any difficulty and full upgrade the gun that you wnt the unlimited ammo for and buy it with the exchange points that that you get from shooting the emblems

Once you beat the game, you can buy unlimited ammo for any gun you have fully upgraded in the bonus points shop.

you get a Tribal Sheva costume and a Achievement/trophy.
you can quit anytime you want, no need to get a checkpoint. just make sure to save when you quit.
what happens when you unlock all 30 emblems?
